Jambars. Yep. You heard me. Made up a word right there...
Adapted from Ms. Giada herself:
In a large bowl, combine:
1 c flour
1/2 c + 2 T whole wheat flour
1 3/4 c oats
1 c brown sugar
1 tsp cinnamon
3/4 tsp EACH salt and baking soda
1 c chopped walnuts
1 c melted butter (I just realized that I made these (pictured above) with only 1/2 c of butter and they still came out...so, you can do it however you like! ha!)
1 egg
1 tsp vanilla
In a small bowl, combine:
13-16 oz preserves or fruit butter, I used a combo of apricot butter and apple butter
1/2 c dried fruit, I used dried cranberries
350 deg. Spray a 9x13 pan. Spread 1/2 of the dried ingredients into pan, pat down. Spread jam mixture on top, then add rest of dry mixture.
Bake approx 35 minutes until golden. Yum.

Granola
Recipe adapted from this site.
Yield: ~6 cups
Ingredients:
3 c rolled oats 2 c almonds and/or walnuts, any combo is fine, rough chop
1/2 c toasted sunflower seeds (toast in dry skillet with sesame seeds)
1/2 c toasted sesame seeds
4 T ground flax
2 T wheat germ
2 T sweetened coconut flakes
1 1/2 t ground cinnamon
Pinch of ground nutmeg
1 t kosher salt
cook following ingredients over medium heat for about 5 minutes, bring to simmer:
6 T (approx) honey
1 T canola oil
3 T applesauce
2-3 T peanut butter
1/3 c brown sugar
dried fruit options:
1/2 c raisins
1/2 c dried cranberries
Mix dry ingredients together, cook wet ingredients, mix together. spread on cookie sheet, bake at 325 for approx. 45 minutes. stir every 15 minutes. when golden and almost done, (at about 40 min or so) add dried fruit in any combination you like. dried cranberries and raisins are great. cool on cookie sheet. will harden as it cools.
